You'll find a wide variety of pistachios sold both in and out of the shell, raw, roasted, salted, unsalted, and even in different types of flavorings. For culinary purposes, it is usually best to buy raw or unsalted pistachios.

If you're buying nuts in their shells, make sure the shells are ivory-colored and only have one end open. Pistachios with large openings are often spoiled, and unopened shells may be unopened and unripe.

Storage
